  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tablespoons poppy seeds
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 2 lemons
  • 3/4 cup plain yogurt or Greek yogurt
  • 1/2 cup unsalted butter, melted and cooled
  • 2 large eggs
  • 1/4 cup fresh lemon juice (from about 2 lemons)
  • 1 teaspoon vanilla extract

For the Glaze (optional)

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice

Preheat the oven and prepare the muffin tin

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups with cooking spray.

Mix the dry ingredients

In a large mixing bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, salt, and lemon zest until well combined.

Combine the wet ingredients

In a separate bowl, whisk together the yogurt, melted butter, eggs, lemon juice, and vanilla extract until smooth.

Combine wet and dry ingredients

Pour the wet ingredients into the bowl with the dry ingredients. Use a spatula or wooden spoon to gently fold the mixture together until just combined. Be careful not to overmix, as this can result in dense muffins.

Fill the muffin cups

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Bake the muffins

Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are lightly golden on top and a toothpick inserted into the center comes out clean.

Cool the muffins

Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Optional Glaze

If desired, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth. Drizzle the glaze over the cooled muffins.

Serve and Enjoy

Serve the Lemon Poppy Seed Muffins warm or at room temperature. Enjoy them with a cup of tea or coffee for a delightful treat any time of day!
