Ingredients

For the Glaze (optional)

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice

 

Instructions

Preheat the oven and prepare the muffin tin

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups with cooking spray.

Mix the dry ingredients

In a large mixing bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, salt, and lemon zest until well combined.

Combine the wet ingredients

In a separate bowl, whisk together the yogurt, melted butter, eggs, lemon juice, and vanilla extract until smooth.

Combine wet and dry ingredients
