Ingredients

For the Coffee Panna Cotta:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 2 tablespoons instant coffee granules
  • 2 teaspoons unflavored gelatin
  • 2 tablespoons cold water
  • 1 teaspoon vanilla extract

For the Caramelized Coffee Beans:

  • 1/2 cup whole coffee beans
  • 1/4 cup granulated sugar

For the Caramel Crocanti:

  • 1/2 cup granulated sugar
  • 1/4 cup sliced almonds or other nuts of your choice

 

Instructions

Make the Coffee Panna Cotta:

    • In a saucepan, combine the heavy cream, whole milk, sugar, and instant coffee granules. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling, and the sugar and coffee granules have dissolved.
    • In a small bowl, sprinkle the gelatin over the cold water and let it soften for about 5 minutes.
    • Once the cream mixture is hot, remove it from the heat and stir in the softened gelatin until completely dissolved.
    • Stir in the vanilla extract.
    • Divide the mixture among serving glasses or ramekins. Let them cool to room temperature, then cover and refrigerate for at least 4 hours or until set.

Prepare the Caramelized Coffee Beans:

    • In a small skillet, heat the coffee beans and granulated sugar over medium heat.
    • Stir constantly until the sugar melts and coats the coffee beans, forming a caramelized coating.
    • Transfer the caramelized coffee beans to a parchment-lined baking sheet to cool completely. Once cooled, break them apart if they clump together.

Make the Caramel Crocanti:

    • In a clean skillet, heat the granulated sugar over medium heat, stirring constantly until it melts and turns into caramel.
    • Once the caramel is golden brown, add the sliced almonds or other nuts to the skillet, stirring quickly to coat them in the caramel.
    • Transfer the caramel-coated nuts to a parchment-lined baking sheet to cool completely. Once cooled, break them apart into small pieces.

Assemble the Coffee Panna Cotta:

    • Once the Panna Cotta is set, remove them from the refrigerator.
    • Top each serving with a few caramelized coffee beans and some caramel crocanti.

Serve:

    • Serve the Coffee Panna Cotta immediately, or refrigerate until ready to serve.
