Sticky toffee pudding is a delicious and comforting dessert that’s perfect for indulging your sweet tooth. Here’s a classic recipe for you:

 

Ingredients

For the pudding

  • 200g dates, pitted and chopped
  • 250ml boiling water
  • 1 teaspoon vanilla extract
  • 1 teaspoon bicarbonate of soda
  • 75g unsalted butter, softened
  • 175g light brown sugar
  • 2 large eggs
  • 175g self-raising flour

For the toffee sauce

  • 200g light brown sugar
  • 200ml double cream
  • 50g unsalted butter

 

Instructions

  1. Preheat your oven to 180°C (350°F). Grease a deep baking dish or individual pudding molds.
  2. Place the chopped dates in a bowl and pour the boiling water over them. Stir in the vanilla extract and bicarbonate of soda. Let it sit for about 10 minutes to soften the dates.
  3. In a separate bowl, cream together the softened butter and light brown sugar until light and fluffy.
  4. Beat in the eggs, one at a time, adding a little flour with each egg to prevent curdling.
  5. Fold in the remaining flour until well combined.
  6. Stir in the soaked dates and any remaining liquid into the batter.
  7. Pour the batter into the prepared baking dish or molds. Smooth the top with a spatula.
  8. Bake in the preheated oven for 25-30 minutes for individual puddings or 40-45 minutes for a larger pudding, or until the pudding is firm to the touch and a skewer inserted into the center comes out clean.
  9. While the pudding is baking, make the toffee sauce. In a saucepan, combine the light brown sugar, double cream, and butter. Cook over medium heat, stirring constantly, until the sugar has dissolved and the sauce has thickened slightly, about 5-7 minutes.
  10. Once the pudding is baked, remove it from the oven and let it cool slightly. Pour some of the warm toffee sauce over the top of the pudding, reserving some for serving.
  11. Serve the sticky toffee pudding warm, drizzled with additional toffee sauce and perhaps a dollop of whipped cream or a scoop of vanilla ice cream.
