Boba Tea Cupcakes are a fun and unique twist on traditional cupcakes, inspired by the popular bubble tea drink. Here’s a recipe to make them:

Ingredients

For the cupcakes:

  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/4 cup tapioca pearls (cooked according to package instructions)

For the frosting

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2-3 tablespoons milk or cream
  • 1 teaspoon vanilla extract

For garnish

  • Cooked tapioca pearls (leftover from the cupcakes)
  • Boba tea straws (optional)
  • Additional milk or cream (for soaking tapioca pearls, optional)

 

Instructions

  1. Preheat the oven and prepare cupcake pan: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners and set aside.
  2. Prepare the cupcakes: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. Alternate adding dry ingredients and milk: Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Be careful not to overmix.
  4. Fold in tapioca pearls: Gently fold the cooked tapioca pearls into the cupcake batter until evenly distributed.
  5. Fill cupcake liners: Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
  6. Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove from the oven and allow the cupcakes to cool completely on a wire rack before frosting.
  7. Prepare the frosting: In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Add the milk or cream, one tablespoon at a time, until the desired consistency is reached. Stir in the vanilla extract.
  8. Frost the cupcakes: Once the cupcakes are completely cooled, frost them with the prepared frosting using a piping bag or spatula.
  9. Garnish: Garnish each cupcake with a few cooked tapioca pearls on top. Optionally, you can insert a boba tea straw into each cupcake for decoration.
  10. Serve: Serve the boba tea cupcakes immediately, or store them in an airtight container in the refrigerator until ready to serve.
