Boba Tea Cupcakes are a fun and unique twist on traditional cupcakes, inspired by the popular bubble tea drink. Here’s a recipe to make them:
Ingredients
For the cupcakes:
- 1 and 1/2 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/4 cup tapioca pearls (cooked according to package instructions)
For the frosting
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2-3 tablespoons milk or cream
- 1 teaspoon vanilla extract
For garnish
- Cooked tapioca pearls (leftover from the cupcakes)
- Boba tea straws (optional)
- Additional milk or cream (for soaking tapioca pearls, optional)
Instructions
- Preheat the oven and prepare cupcake pan: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners and set aside.
- Prepare the cupcakes: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Alternate adding dry ingredients and milk: Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Be careful not to overmix.
- Fold in tapioca pearls: Gently fold the cooked tapioca pearls into the cupcake batter until evenly distributed.
- Fill cupcake liners: Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
- Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove from the oven and allow the cupcakes to cool completely on a wire rack before frosting.
- Prepare the frosting: In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Add the milk or cream, one tablespoon at a time, until the desired consistency is reached. Stir in the vanilla extract.
- Frost the cupcakes: Once the cupcakes are completely cooled, frost them with the prepared frosting using a piping bag or spatula.
- Garnish: Garnish each cupcake with a few cooked tapioca pearls on top. Optionally, you can insert a boba tea straw into each cupcake for decoration.
- Serve: Serve the boba tea cupcakes immediately, or store them in an airtight container in the refrigerator until ready to serve.
